What a mess! What a cake!

There's something I thought I had improved during lockdown: patisserie. It requires time and attention. And what have we had in these days? Time at home and need of something that could capture our attention. A sort of Confined Challenge.
But I failed!
Remember my disastrous cookies and my atomic cloud plumcake? This time I went beyond myself.
I made a lime cheesecake. Better, I tried to. Result was … no words. My guests said the taste was good: they must love me a lot (as a matter of fact they're my family).
The recipe is from a cook magazine I collected some years ago (very nice magazine La cucina del Corriere - Corriere della Sera is one of the most important Italian newspaper).

For 4/6 persons:
200 g chocolate cookies
400 g cream cheese
100 g ricotta
125 g butter
150 g sugar
80 g self-rising flour
4 eggs
4 limes

As you do for all cheesecakes: melt butter, crush cookies, then mix them in a bowl. Press the crumb mixture in a pan and put in fridge for 1 hour. Meanwhile, beat eggs and sugar and add flour. Sift cream cheese and ricotta and add to eggs mixture with lime juice and zelts. Pour the filling into the crust, cover and put in fridge until firm.

After almost 3 hours you should have this.
I had that.
More like a spoon dessert than a cheesecake. Very sad!

Next day I comforted myself with asparagus, ham and cream pasta.

PS Tomorrow it'll my first time at work in Archives since the beginning of lockdown, and my first getting on bus since 2nd March. I'm little thrilling.

  1. The cheesecake still looks delicious Francesca. I could take a serving or two as a spoon dessert, no problem! :)

  2. The cheesecake looks pretty good. And the pasta looks fabulous! Getting on a bus again would be very strange.

  3. I would very happily eat a large helping of either of those.
