I'm not really a breakfast person. To be honest I can often go without breakfast or lunch and just eat a proper meal in the evening.
When I do breakfast though, especially at the weekend I tend to make a little more effort. One of my favourite breakfasts is eggs in any form. I enjoy poached eggs on toast, but will also often make scrambled eggs on toast as there is so much potential to add flavour or use up veg.
- Mushrooms
- Worcestershire sauce (the resulting colour may be off putting but the flavour is worth it)
- Cheese
- Mustard
- Spring onions
Although, I hasten to add, not all together!
This morning I started with the standard eggs/milk/butter (or butter like spread) mix. I do my eggs on the hob as I find this helps me to judge how 'done' they are. It also helps when mixing in other ingredients - I'm not sure how well these mixtures would work in the microwave.
When the eggs had started to cook, but before they were fully done I added some spinach which needed using up. This combination was suggested in a book called 'How to Eat Like a Hot Chick'. I should point out that this was something I won in some indiscriminate competition entering - it's not the type of book I'd usually buy.
Finally, to add a little more flavour I spread the toast with a little sriracha.
Scrambled eggs may not the most adventurous recipe on this blog but they are full of experimental potential.
