Heh. Sossidges.

 Oh man, sometimes I think I cook far too fancily. I just don't need to faff around so much. It's a deep pleasure a lot of the time, and it can be cheering craft, stress relief and such. But some days, occasionally, why not have sausages and be done with it?

This week is meat week on my calendar, and I have mostly not been being all that meaty. I made some fairly successful buckwheat pancakes (these ones have egg in so are a lot more reliable than the skimpy ones I did before). 

 


I used them to wrap paired asparagus spears wrapped with ham (note the ratio of asparagus to ham, v much my priority here)


...and bunged them in the oven with some Parmesan on top and random blobs of creme fraiche that had no other purpose in my menu. 

They were perfectly ok, but much nicer warmed up when I bothered to make Bechamel (I also had spare milk and plain yoghurt having for some reason wildly overdairied in my last shop) and pour that over. Sometimes, more is more.

So much for proper cooking. Let's have some sausages. I haven't just made soss and sides for ages. Or when I have the emphasis has been on the sides (those fritter days) or making them into a pasta sauce or something. Focus on sides was really the plan this time, but tbh I was mainly just glad to have sausages.

Okay, sides. I did lentils again - not quite Liz's lentils, but a similar recipe based on mirepoix and stock, with piles of herbs added at the end. Mint, parsley, tarragon, lemon zest and juice, splash of oil, cough might have added some garlic cloves and squooshed them in... you get the picture.

Technically, that was a recipe, from Ed Smith's sides book (On the Side, Kate and I have both mentioned before). As, technically, was green beans in vinaigrette, which was the second side. I might do this more; have been feeling uninspired cooking meat dishes lately, but maybe I should go back to fairly plain ones and fancy up the sides for a change. I was terribly glad to just be eating sausages.

I fully plan to mix the beans and lentils together for the leftovers though. Love me some mustardy vinegary lentils.  But mainly, leftover sausages hurrah!

I have to do a pile of marking and some yoga first. But STILL hurrah.
