Rage, rage against etc

 Confined Cocktails was a notably defiant one this weekend. Yes, it's dark before 8pm. Yes, we've got out the bedsocks and bought a nice new hoodie in Fat Face. Yes, if we've been on holiday it's been less than 200 miles and no passports required. And yes, it's September tomorrow. But we were still very much on the summer drinks. Gin sling, elderflower wossname, pinot grigio to the fore. 

And so it is in my kitchen, too. Vegan week has come round again. It is very much tomato season this week and next, because tomatoes are still in good nick and flavourful. I may have bought... a bit... at the market this week.

This is what wouldn't fit in the fridge...

But it's the simplest of recipes (Persiana again), for baby courgettes which don't need prep, but in this case for courgette wedges, chunks of tomato, lots of cloves of garlic, some oil, cumin and salt. The cumin is the bit I didn't expect and which makes it more fun.


I added corn because it's corn season. Oven. 200degrees plus. 30 minutes or so. Squishy, rather than blasted, is what we're going for. 


It would be good with rice or as a pasta sauce, but you really only need a bit of bread. And leftovers are good for days of lunches. And the summery feeling remains, for a bit longer.
