Not *bad*, not as in grey and mushy. Just unco-operative. In this case, refusing to bloody ripen even though I bought it last Wednesday. But I had to make this tonight, the herbs I bought for it are now on their last legs. I resent it, though. Avocados! It's summer! Time to ripen! These are my last soba noodles as apparently there's some sort of national shortage of buckwheat products (I've no flour either)! Make it worthwhile!
Luckily, things turned out all right. This is the
last meal (for two nights) of vegan week and for once it actually is
vegan. It's a warmish salad, with those noodles, cooked and refreshed,
coriander and basil chopped, pistachios, lime zest and juice, seasoning
and oil... and lots of cardamom seeds, ground up.
Plus some baby spinach, cos I had it, and it's green and needed using up. Green is definitely the theme.
As far as tips go, I have a) buy a better avocado and b) don't leave the cardamom on the side when you make the salad and then have to trek back to the kitchen when you realise you've left something out. Top cheffing, here. But the cardamom is excellent, and makes this low-hassle fancy for summer.
As it gets hotter, I tend to cook less, but this level of cookery I can contemplate. Recommended.
I'm not a veg eater, but that I would happily eat. Sold to the lady in the hat!
