Not a risotto but the effect is the same...

In a weirdly specific aversion, Child 2 does not like risotto. Of any kind. (She is otherwise a fantastic eater, will try anything once and eats a wide range of foods. Child 1 has the same issue with lasagne *weeps*). This is a challenge, as risotto is the official food of lockdown and everyone else in the family loves it. I have tried loading it with ingredients she loves (really recommend Nigel Slater's creamy chicken risotto) doing it as a side dish, and calling it by another name. No dice, apparently it's something to do with the texture (though mixing curry or chilli with rice is apparently FINE and not at all the same thing...) I suspect it's now more about the position than the food, but I refuse to make 2 meals, so....tomato and tuna rice.

Cook 225g of rice in the usual way. While it is bubbling, fry 2 chopped garlic cloves, 1 chopped onion and 2 diced rashers of bacon. When softened, stir in 700g passata (the recipe said 2 x 400g tins of chopped tomatoes) and 2 cans of tuna (again, recipe said one tin, but that seemed mean). Season the sauce and bubble for 5 minutes. Drain the rice and add to the sauce with a good handful of chopped parsley.  Mix well and serve with garlic bread. I also grated some parmesan for sprinkling. This serves 4 really generously.

It went down well with almost everyone. Child 2 ate most of it, but not with gusto and mainly because the alternative was toast (see 2 meals proviso). The others had double helpings. She's fine though, folks, I made her a pie this weekend...

  1. Heh. This is definitely not a risotto, but I can see why it would only partially meet the not-risotto criterion. I'd say poor Child 2, missing out on this tastiness, but she seems pretty well catered so I reserve judgement here.

  2. Yes, apparently all saucy rice is BAD, no matter how it is created. Got to keep trying though, as there are often sudden epiphanies - she only decided to like salmon and prawns last year after years of refusal - adores them now. Smoked mackerel has only been declared delicious during lockdown. We also do it with Child 1 and his hatred for cheese sauce (Why?! Macaroni cheese, for goodness sake).
