I'd volunteered to help get groceries for those who can't, and yesterday somebody needed food, so I got to go shopping. Obviously that meant it was a great time to shop for myself too, so I got FISH. Fresh and tasty!
The real star of today's lunch, though, was Smitten Kitchen's roast cauliflower with brown butter dressing. She does love some brown butter, does our Deb. But we won't complain because this was spectacularly good.
I'm lucky in that the shops here are still pretty well stocked – sliced bread aside. None of that anywhere. And veg can be a bit hit or miss, but you're sure to find something. Anyway, so none of this meal was actually a challenge – in terms of either sourcing, finding a use for mystery ingredients, or even simple cooking difficulty – but it was really, really good, so here we go.
Sliced the cauliflower and slid into a hot oven with lots of olive oil and salt. Mmmmm. Started to think about the rest of the meal (I do tend to think in instalments at the best of times, and these are not the best of times).
Chopped and boiled some small potatoes, and peeled some carrots. Started browning the butter and threw in some pine nuts, because turns out, I don't have pumpkin seeds. Turned over the cauliflower. Chucked the carrots on top of the spuds. Mixed some breadcrumbs with fish spice (a very dill-heavy mix, not my favourite but it worked well this time), dredged my perch fillets and gently fried them. By now the cauli was done so I chucked that in the warmer drawer, drained the potatoes and carrots and roasted them in the cauli's old tray. Seasoned the butter and (having let it cool) squeezed in half a lime. The 11yo felt this was too much lime, but she's wrong.
Enjoyed a meal that the family called "ridiculous", in a good way. The fish was remarkably good, the cauliflower amazing, and the other bits did their job very well thank you. It really did taste a whole lot better than the amount of effort should warrant. Now if only my food photography skills could do it justice...
