Stuck in the middle

When I'm working from home I'll often skip lunch (to be honest I usually do this at weekends too). Now that I am in the office on a more regular basis though, I'm trying to get back into the routine of making lunch to take with me and I've been struggling with inspiration.  I realised recently that my sandwich fillings tended to be egg mayo, cheese, tuna mayo, or tinned fish, which was starting to get a little predictable.

I decided to ask my friends on Facebook for suggestions and they didn't disappoint. While I'm flexitarian/pescatarian I specifically asked for vegetarian suggestions. Some of the responses were ones I did used to make, such as hummus, but had somehow forgotten. Others were completely new to me, such as coronation cado.

So far, I've tried two of the suggestions offered. First up the new to me coronation cado. This is basically coronation chicken but with avocado in the place of chicken. Having never made coronation chicken before this was still a little experimental and I think more practice is needed to get the right balance of ingredients. It's not the most visually appealing combination but tastes pretty good.

The second filling was a simpler feta, olives and spinach which offered a tasty change from cheddar and pickle.

For those interested other options suggested included:

  • Hummus and red pepper
  • Grated carrot and hummus
  • Pesto and mozzarella (with or without tomato)
  • Falafel and yoghurt
  • Cream cheese and cucumber
  • Herby halloumi, tzatziki, and Mediterranean salad
  • Peanut butter and banana (not for me, as I'm not a banana fan)
  • Goats cheese, caramalised onion, and peppers
  • Smashed minted peas and feta

Some of those may be more transportable than others, but one thing is certain - I won't be short of lunch time inspiration for a while.

  1. There are some great suggestions here. As a student many years ago, one of my favourite sandwiches was cheese (often Wensleydale) and pesto with baby spinach.

  2. Let me add houmous topped with avocado in lots of lime with some kind of herb (tarragon ideally, but leftovers like dill or basil go well too). It's my New Year go to when I have had it entirely with festive food, but it's good any time.

My inner Yankee 5 year old feels compelled to offer up peanut butter and jelly (by which she means "jam" [traditionally Smuckers grape jelly, but said inner 5 year old prefers peach, apricot, or raspberry, as strawberry Is Boring]), ideally with a side of carrot and/or celery sticks. Ants on a log (celery filled with peanut butter and topped with raisins) optional, but ideal. PS God bless George Washington Carver.
