It's veg time again

 It's summer, it's not overwhelmingly warm, it's vegan week chez moi... Very pleasing options here, quick and easy and working at least okay on the second day. Useful stuff - I'm busy at work at the moment, and today was an office day

Firstly: tomato and grape salad

I know lots of you don't do fruit with veg, but I enthusiastically do, and this is a great mix. It's another one from Two Kitchens, which I took forever to buy and am now using far more of than I ever did Five Quarters. 

For this you want some quick pickled onion - slice a red onion thinly and soak in wine vinegar for a few minutes. Add chopped tomato, halved grapes, basil, oil, plenty of seasoning, and ideally some freshly fried croutons - but for my second day it was just bread that had soaked in the salad. Fruit panzanella? It's a thing.

Not for you? How about a plate of nothing but greens? Or at least, that's what it's meant to be. Greek Greens (from Ripe Figs). I rather failed at the first step.

This is also meant to be just the leaves, but I like chard stems so I chopped them fine and used them anyway. Shredded leaves, added some rocket, boiled them in small amount of water (500ml for a big lot of leaves) for about 7 minutes.

Then add spinach and coriander, and boil it longer - another 5 minutes. Yes, this is a fair amount of time for greens, but this is a specific dish, and you'll be surprised how they can take it.

Now! Drain those greens and leave them for 10 minutes. Don't do anything else yet. 

When they are warm rather than hot, dress the hell out of them with olive oil, lemons, and lots of salt and pepper. 

They can be a side, or as here you can have them on toast just as a thing. The cookbook blurb says just looking at them makes you feel healthier, and this is sort of true, but it's very tasty, which is more important. Even though I did sneak some cheese in on the side.
