Last week felt like it lasted a month! I'm in the office Thursdays and Fridays at the moment and struggled to stay awake on the train in. The 3 mile walk to the office in the rain may have helped wake me up slightly but it wasn't the best way to start the day.
So the first meal here is a bit of a cheat. Despite having plenty of food in the fridge and a rough idea of what I was planning to make I ended up ordering a Chinese takeaway instead. Even choosing the take away seemed like too much of a challenge, but luckily Deliveroo allows you to just reorder a previous order. In this case that was mushroom rice with prawn curry, and vegetable spring rolls.
Now ending the week exhausted is one thing - but starting it just as exhausted is slightly more concerning. It's not even as if I had a particularly busy weekend -some walking, a little dancing (but mainly listening to DJ sets while pottering at home) and some family time. Yet today seemed like an uphill struggle. The weather didn't help, and I think I've been underestimating how tiring seeing people (as welcome as it is), travelling etc. can be after so long at home.
Based on my low energy I decided to reach for a old familiar meal for dinner tonight - veggie bolognaise. This used to be a regular feature on my weekly menu but I've cooked it less over the last year. That was partly due to exploring new recipes, and partly because it relies on tins which I've been keeping on standby in case I need to isolate at any time.
It's a simple recipe and I made double so I have leftovers to reheat later in the week. Begin with a #JacobinDay onion and some garlic. Once softened add a tin of lentils and some Worcestershire sauce. After a couple of minutes add a tin of tomatoes. I also threw in some frozen mixed veg to up the nutrients. Serve with pasta and topped with cheese. The perfect comfort food of easy to prepare, tasty and filling.
I'm hoping to make some some more interesting meals later in the week (and do a food shop) but at least I know I have one meal that just needs reheating. Now I just need to remember that just because we are allowed out the house more, that doesn't mean I have to go out if a duvet day on the sofa is what is needed to replenish my energy in a world which requires constant adjustment.
It really is tiring at the moment: the heat then the damp, and all the effort of being out with other people is a lot. I'm glad I had a quiet weekend this time after a busy one last.
