Experiments and old favourites

I have never been an adventurous cook but I'm not averse to making things up as I go along and I enjoy using up leftovers. Here are some of my meals from the past week.

I made a sort-of crust out of cooked couscous, ill-gotten coriander and a very little lemon juice and stuck it on top of salmon fillet. The vegetables are roasted new potatoes and carrots, and spring greens blasted in the microwave.

More couscous, with odd vegetables that needed using up and some chopped fake bacon (made chiefly of soya and peas) that was an impulse purchase.

Although this looks very similar to the previous one, the ingredients are mostly quite different. It's quinoa 'risotto' (or perhaps 'quin-what?-o') with blue cheese and cabbage, covered liberally in toasted breadcrumbs instead of parmesan.

There's still a place for reliable standbys, of course. Eating during an evening webinar (with camera switched off, of course) called for this jacket potato with baked beans and some blue cheese.

This custard tart was a greedy purchase during the same shopping spree as the fake bacon. My late grandmother was very partial to them, so they are a happy memory thing for me.
