I'm going to the office tomorrow. Absolutely having kittens about it, for some reason. It's not like I've not been there, and it's not like I've not left home since March, but for some reason I am confused and stressed. It might be the lateral flow test I've just started, for the first time, or the fact I know a PCR test is also in the post for a research thing, none of which feels absolutely like normal fun times. It may be how many of my colleagues live in Hounslow, current restrictions tbc. Or it may just be having to get an oyster card earlier today, for the first time since last spring. The tide of Before Times is starting to roll back.
If you could all think loudly at me at about 6.30am tomorrow REMEMBER YOUR PACKED LUNCH that would be helpful.
Meanwhile, I'm eating chicken.
Over the weekend, I made rather delicious lemon ricotta chicken (well, turkey) meatballs. I do not own a mincer, I will keep on using turkey mince whenever I'm told to do chicken. I have process photos, but not the final product, but it's about what you'd expect: squish together mince, ricotta, lemon zest, ricotta, an egg, some breadcrumbs and roll them into smallish balls. Then fry off till browned a bit.
And then add them to a sauce to finish cooking. You might do a tomato sauce, but this was Eurovision night, and I was both frothy and time-pressed, so my sauce was about 200ml prosecco. Hurrah! It starts out very frothy and cheering.
Later, of course, it's just white wine, no bother.
Serve with something to soak up your lavish saucing. It's very good and not complicated.
Since then, I've made Three Cup Chicken again. Finished product rather than process photos this time. It works well for a dank May as well as a grim November, bless it.
Also good. Let us remember Eurovision weekend before I go - Eurococktails turned out to be the order of the weekend rather than just the evening. The rest of the prosecco did nicely in a French spritz and a nostalgic Hugo, there was a Nutty Russian and a terrifying Munich negroni. And Sunday was... quite quiet tbh.
Perhaps it's time to go back to sobriety and the commute after all.
I missed this when you posted so I hope that your trip into work yesterday wasn't too traumatic. And that you remembered your packed lunch!
ReplyDeleteYour turkey/ricotta meatballs sound the bomb. I've made beef meatballs with ricotta before with a tomato sauce, but turkey or chicken meatballs with proseccoo-based sauce sounds infinitely cheering.
