It's been a hell of a week for practically every kind of anxiety you could shake a proverbial stick at so I've been doing a lot of walking whenever the weather was amenable. Yesterday it was just a walk to the shops but on a beautiful sunny autumn day that's still an outing.
We live about half way up a very steep hill and of course all the town's shops are at the bottom in the valley. It's fine going down, but coming back up with shopping is a bugger but it keeps me fit. In the spirit of #UnconfinedWalks I thought I'd post a couple of photos.
We live right on the 49th parallel so have been hyper-conscious of the US election. I love that whoever lives in this house flew the Canadian flag to celebrate the result.Not the best photo in the world, but taken about half way down the hill - I tend to zig zag going up and down as it's easier on the legs.And to make this post legitimate for a cooking blog, I made Mac & Cheese last night. The husband was down in the smoke so I was pleasing myself for dinner. Normally I finish up with prawns and something, but last night the anxiety of the last week needed a culinary cuddle and the easiest solution was Mac & Cheese.
As Melinda has commented on a couple of previous posts, some foods just aren't photogenic, but taste good. Mac & Cheese is one of those dishes, but here's a photo to prove it happened.
Paired with a New Zealand Pinot Noir Rose, it was both comforting and civilised!I made more than I could eat so that I could have some for breakfast this morning which I had before the husband returned from the smoke because he'd think I was weird, and you should see some of the things he eats for breakfast! Of course after the left overs had cooled I had to keep reminding myself that I was keeping them for breakfast in order to stop myself picking at them because I love cold Mac & Cheese - okay, yes I am weird!
Anyway, that was yesterday. It's 10.30 am here, the sun is shining, so I think there may be salmon on the menu tonight since we've still got some from the haul we got from our neighbour last week.
I hope everyone is doing well and surviving with whatever stage of re-lockdown is happening in your area.
Mmmmm, I've been craving mac and cheese lately. (And I too like it cold, though admittedly I've never tried it for breakfast. But I used to be a big fan of leftover chowmein brekkie, so... no judgement.)

DeleteIn Italy Mac & Cheese (maccheroni al formaggio) is a sort of American myth come from lots of movies and TV we’d been watching over the years. When I’ll be able to go to US, I’ll order it even if I don’t like cheese at all!
