Food for when you are out if (metaphorical) spoons

I had a meal planned for this evening. I'd picked up the missing ingredients. Then I ended up on the phone for longer than expected (lovely catch up, but delayed cooking). At the end of it I had lost the enthusiasm for trying a new recipe.

I also had two meals in the fridge but one was unappealing tonight, and the other required cooking accompanying rice.

Luckily I have a fall back plan  for when I have no energy and little appetite. Pasta packets.

Tonight's choice was smoky cheese and pancetta. I really can't justify calling this a recipe, simply put 100ml milk and 250ml water in a saucepan, boil and add contents of the packet. Stir until cooked.

I would say it's fail safe, but student experience of allowing milky water to boil over and the pan to boil dry disprove that claim.

I added some frozen sweetcorn to give a semblance of nutrition, and topped with cheese for added comfort.

I know it's not the healthiest choice but if the choice is a pasta packet or not bothering to eat it's a good standby. N.B. super noodles fulfill the same role.

  2. This is good to see - as Katie says, we need other kinds of eating, and this sounds very familiar. My equivalent is peanut butter on toast... (or cheesy beans, but that requires the right kind of cheese to hand, and this is not a given).
