Emergency baking

Hello blog. Lots going on (in a nothingy-2020-ish sort of way) chez moi, but for now just a quick post. I thought I'd better tune in to tonight's much-delayed UK press conference, and as soon as 5 Live finished its rugby commentary and headed over the Whitehall, I found myself baking.

I can't help it. It's a stress reaction.

I recently opened a shiny new jar of black treacle, so what better than my mum's recipe (I forget where she gleaned it from) for 'treacle muffins'? They're dead simple.

  • 8 oz plain flour
  • 4 oz soft brown sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 egg, lightly beaten
  • 6 fl oz milk
  • 4 fl oz oil
  • 4 tbsp black treacle
Cooking Time: 25 mins
Gas Mark 6, 200C / 400F
  1. Mix together the flour, sugar, baking powder and salt, and make a well in the centre.
  2. Blend together the remaining ingredients and mix into the dry ingredients until just blended. Do not overmix.
  3. Spoon into muffin cases.
  4. Bake in a pre-heated oven at Gas Mark 6 / 200C / 400F for 25 minutes until well risen and springy to the touch.
They're currently sharing the oven with an exploding dauphinoise. Let us not speak of the two (2) other cakes already on the go in the house...

    1. We haven't even tried them yet, there's so much other cake to eat! But they're planned to be treats for working days this week. They've risen well, so I think they'll be good.

  2. I now really want to make treacle muffins, despite a parkin delivery only yesterday. This is troubling.

    1. They're so easy and effective: the treacle makes them taste spiced even there's no real spice added. I mean, um, probably parkin is enough for now.
