A selection of soups

 This is partially a 'seasons are turning and it's time for soup post' and partially 'I got carried away with fresh food when shopping and had to do some bulk cooking'. As such neither of the soups have actually been eaten yet, but I've made them both in the past.

Soup 1 Confetti soup

This is a recipe from a yoga magazine last year, I think a Christmas issue but I have returned to it throughout the year. It's also the only one I remembered to take pictures for.


It's super healthy and super comforting-just what is needed as the weather takes a cooler and greyer turn. Take a red onion and a carrot diced and sweat for a couple of minutes, then add diced red pepper, yellow pepper, a couple of cloves of garlic minced and a courgette diced. 


Cook stirring regularly until translucent then and 3 tablespoons of flour (the recipe says plain, but I only had self raising to hand and it seemed fine for these purposes). Stir well to combine the flour then add 800ml of vegetable stock, remembering to keep stirring. Finally add half a tin of butter beans and some kale and simmer for 10 minutes. 


Another bonus of this recipe is that it is a lot quicker than many soup recipes. Makes enough for two and is filling enough for a main meal.

Soup 2 Kale and Borlotti Minestrone

This is from 'The Green Roasting Tin' which I got as a gift last Christmas and has been my go to cookbook ever since, seriously I should be on commission. While it takes it takes significantly longer to cook than the first soup it is very much a chuck it all in the roasting tin and go and do some knitting recipe. Basically take 100g macaroni, an onion, a small carrot, a couple of cloves of garlic, paprika, a tin of chopped tomatoes, 700ml vegetable stock, a tin of borlotti beans, and kale, put them all in a deep roasting tin, stir, cover and put in the over for 50 minutes at 200C. The recipe also includes celery, but I don't like it and basil which I didn't have to hand. As it thickens over time I suspect it will need a little water to loosen it once I defrost it. It should be topped with chilli oil and toasted pine nuts but this will very much depend on whether I remember that detail when I defrost it. Again there is plenty for 2 people for a main meal.
