Roast tomato traybake (but not just tomatoes)


I'm enjoying the bank holiday, plus an extra day work gave us in recognition of the 'challenges' of this year so far. It feels like August has been an increasing series of short trips - a weekend away planned long before lockdown that miraculously still happened, a visit to distant in-laws and then a week away in this country that was also booked in the before time. All lovely, and happily coinciding with Eat Out to Help Out (snigger, sorry), meaning that I have eaten out quite a lot in recent weeks. I'm now trying to rein it in and stop having quite as much cheese for pudding. Downside is that, after weeks of freezer rummaging in between packing, I now have to start, once again, creating healthy and nutritious meals that everyone in the family will eat. This traybake isn't all that healthy (hello halloumi) and included items scorned by both children (garlic bread on the side, sorted) but it was easy and delicious.

First, whisk 3 tbsp olive oil, 3 tsp honey, 1 tbsp water, 1 tbsp Dijon mustard, 1 tbsp lemon juice, 1 tsp coriander seeds (lightly crushed), 1 tsp cumin seeds and 1 tsp chilli flakes in a bowl. Slice 225g halloumi and plop in the marinade for about half an hour. 




Then, boil 400g of new potatoes until cooked, drain and chop into bite-sized pieces. Put into a roasting tray with 160g sliced chorizo, a sliced leek, 300g tomatoes (any size, larger ones cut into wedges) and 8 cloves of garlic in its skin.



Pour in 3tbsp of the halloumi marinade and toss everything together. Lay the halloumi slices on top and put in the oven at 180/200 for 25 minutes. Flip the halloumi if it goes too charred. After 25 minutes, add 200g of frozen peas and cook for another 5 minutes.

Serve with chopped mint. I added more chorizo than the recipe suggested, peeled and squashed in the whole roast garlic cloves, and used the excess marinade as an additional sauce. This could easily be halved and would be excellent cold the next day.

There was crumble for pudding - you don't want to rush back into healthy eating...
