I am aware that I seem to be turning into Confined Kitchen’s Not Really Cooking Correspondent – I promise that next time I will write about something I have properly made from scratch, but this time I feel the need to share with you the joy that is the Dishoom At Home Bacon Naan kit.
Dishoom is a small chain of Indian restaurants in London, and their bacon naan is the stuff of legend. Although I’ve eaten in the Kings Cross branch a few times, I’ve never managed to be there in time for breakfast, so I was very excited to find out they were now offering a kit to make one yourself at home.
Since we were talking about good things about lockdown this week, I’ll add this one to the list – finally being able to catch up on things you somehow missed out on pre-lockdown: in my case Bacon Naan, and seeing One Man, Two Guvnors and Barbershop Chronicles (thanks NT Live for the latter two).
The kit costs £16, and contains enough for two people (or one person for a fairly substantial dinner, maybe plus an Indian-style salad – now that’s a thought…) plus tea and spices so you can make your own masala chai to go with it.
They only produce a limited number per day, so you will probably have to book a delivery date a week or two in advance, although this would be useful if you were ordering for a special occasion, not just out of greed like me. You should eat it within 24 hours of it arriving with you. Ours arrived Thursday morning, and we ate it on Friday. Ours turned up early enough that we could have had it for lunch/brunch on the day of arrival, but I don’t know if that’s guaranteed.
The kit contains: three dough balls (so you have one spare in case of mistakes), eight rashers of very good bacon, cream cheese, tomato and chilli ketchup, coriander garnish, plus tea, ginger and other spices for the chai (you’ll need your own milk and sugar).
You cook the bacon in the oven, while you prepare the naans. Roll out the dough balls on an oiled surface, and then place in a very hot pan for 30 secs. Then transfer the pan to a very hot grill and cook for another 45-ish seconds until the naan is puffed up and slightly brown. Apart from the daft design of my kitchen, which means the grill is on the opposite side of the room to the hob, this was fairly simple, and the naans puffed up most satisfactorily.

When they’re all ready and the bacon is ready, spread the naan with the cream cheese, put bacon on one half, drizzle (or dollop, there’s plenty of it) with ketchup, and sprinkle with coriander, then fold the bread over and eat. It’s a touch messy, but all the best bacon sarnies are I feel, and this was a very good one. The masala chai was good too. Dishoom also make a charitable donation for every kit sold.
