Spaghetti, sea and sweet dreams



How many recipes today!

For me it was a quiet weekend, aside the first injection I made to Sorriso the turtle🐢. It was a very very very difficult operation. Three tries to the goal! Three little holes in Sorriso’s skin! And I am absolutely not sure to have been able to inject all antibiotic. My little pet was kind and quite and she didn’t try to bite me.

Today I made for me and for you The Italian Dish: spaghetti al pomodoro. I need few pastasciutta (pasta is my comfort food anywhere anytime).
Easy to prepare: 
  • carrot (for one person one) 
  • onion (a quarter) 
  • garlic (2 cloves) 
  • (celery if you want, but as I said I haven’t) 
  • passata (tomato puree)





It’s enough to mince carrot, onion, garlic and let them brown. Then add passata, salt and little sugar (against tomato acidity). Simmer - if necessary add some water - until is done (20-30 minutes).
Dried red chili peppers



I added also some Nduja. It’s a paste made by pork fat and red hot chili peppers, very hot.


 
 
Nduja is from Calabria a wonderful region in Southern Italy with a beautiful sea. I was there in October for my friend Lina’s wedding. A week of sunbathing, swimming, eating and laughing.

    1. It's very hot so a jar is enough for a long time (if you're not from Calabria of course!).

  2. Nduja scares me! I've had some that's very nice and some that's like FIRE. You can tell my Italian visits are more Liguria than Calabria... Beautiful photos make me dream of going though...

  3. There's nothing quite like a comforting bowl of pasta to make you feel that things aren't so bad.

    I hadn't come across Nduja before, so will definitely investigate, but will bear in mind your comments about how hot it is!

  4. Those views of the sea are wonderful! I long to be by the sea right now: I think it will be my first trip when all this is over, although the nearest coast to me is the Norfolk coast and it doesn't look quite like that.
