One Breast Two Marinades




I caught recipes from yours for the yesterday and tonight dinners but variationibus Franciscae after a rapid meeting with madam larder and mister fridge.

 

Two marinades for one chicken breast.







From Melinda's Chips for tea I stole the yesterday dinner. I changed chicken thighs to chicken breast and the Greek yoghurt to DIY yoghurt. I make it myself at home (it's middle-class, isn't it?): it’s perfect for savouries because there's no sugar at all. I hadn't neither oregano nor rosemary. In our family country home we have a couple of rosemary bushes in the garden like Melinda's parents but I have finished my stock and "I've never got used to the idea you have to buy it" (cit.).
I mixed 1 tsp dried thyme, 1 tsp dried mint, half of a dried chili pepper, zests of orange, salt and 1tsp oil. The dish was delicate with a pungent citrous aftertaste.
 
Chicken and Romanesque cauliflower salad in very '70s style. Bread is my not so well done version of  Liz's bread.

SarahA and Neil Fefferies have ispired the idea of an oriental marinade.
Marinade stuff:
- 1 tbsp light soy sauce
- 1 tbsp honey
- ginger
- 1 tsp paprika.
After 24 hours add the marinated chicken to a pan and stir-fry and add a couple of carrots thinly sliced and stir-fry for some minutes. Last step: rice spaghetti (I cooked them as the instructions say: never take the initiative!).
Here we have the today dinner. Sweet and caramalised thanks to honey and soy.

  1. This is just brilliant - I'm so glad you've had some inspiration from so many people!

    Ugh, sometimes I remember to buy rosemary if I really need it, but mostly I just think "I'll just snip some-" oh, no. I don't live there anymore. But it sounds like you had lots of good things to put in the yoghurt for that marinade anyway.
